Lo probado y recomendado es usar resistencias variables (potenciómetros, faders, LDR o FRS) de 5k o 10k. Otros valores podrían funcionar pero no los recomiendo.
El datasheet del microcontrolador que usa el modelo Arduino UNO recomienda el valor de 10k para usar en sus entradas analógicas:
(24.6.1) Page 244 states: "The ADC is optimized for analog signals with an output impedance of approximately 10 kΩ or less. If such a source is used, the sampling time will be negligible.
